It would not be a good thing to disable the knock sensor. Without that IMPORTANT feedback the ECM may decide to advance spark way beyond what it should be, leading to serious pre-ignition and engine damage.

Simple work around - use one of the intake manifold bolts to secure the knock sensor to the engine. The wiring reaches that far easily and the vibration gets registered just fine.

As for the EGR issue - Most newer exhaust gaskets block the port off anyhow. If not just get a small freeze plug and tap it into the open port on the front of the head.
