I have to take off the valve cover to replace my to timing belt tensioner next week and want to paint it while it's off. I VHT caliper paint that says it's rated for 900 degrees. Will this work or do I need to get a different stuff? If so what? It must be red. (this is for a 2.2 btw)

If I where you, I would buy another one at a junkyard or on eBay, and get it powdercoated, but that usually takes a lot of time, pending on how busy the shop is.
VHT paint will be fine. You really only need it to be rated to 500* but anything higher isn't going to hurt it
