fogs = you can cover them if it's a decent size mesh, then you wouldn't block out as much light...plus it looks cleaner, unless you cut EXTREMELY carefully, then it MIGHT look good.

As for keeping them on, if your material is really firm, you can just stick in the 2 side pieces (covering the fogs) and they should stay. The middle piece is going to need some work, ie: drilling small holes and keeping it on with zip ties. Another uncommon method is using bathtub silicone to hold the stuff on.
