I just did the same mod to my car. Its a 2003 with the rear view mirror setup you mentioned.
The covers over the maplights can be taken off using your finger even. Pry from the outside corner (the rounded side) of the cover and it will come off. The screwdriver trick will work, you just need to get it in far enough to pass the rounded part of the bulb. Light pressure will make the bulb almost shoot out so be carefull not to loose it if you intend on keeping it.
Im about 90% sure canadian tire/walmart will sell replacement led bulbs that can just slide in.
