When it needs to be upgraded, it's for the same reason as for a filter or throttle body, to increase airflow.

But, the MAF sensor is a special case because it also needs to accurately track the airflow going into the engine. That means not only at wide open throttle, but at idle and all transitions in between, rates of change and deceleration. That is very important to drivability, and smooth, crisp throttle response.
