To your origional question though, seems like you got it pretty well figured out.
Not opting to the aeroforce or the other two, and speaking cosmeticly and function.
If youre planing to go F/I at some point get a Boost/Vac accomplishes same thing, and dont have to replace it later.

Oil Pressure - Electric sender type, not mechanical, I cant remember how any engines Ive seen have somehing happen to the little tube to the guage and pump out most of the oil.

The A/F will work with your stock O2 sensors but as its been said before for accurate readings you need to get a wideband OS sensor. Thats a big cost, unless you just want general readings and the look till you do, However be aware that some guages are not wide band compatable.

Notes:
Will work with most factory narrow-band O2 sensors. May require model 2244 in the Accessories Section.
This product has no provision for dial illumination/backlighting.
I would probably go with oil temp myself instead of trans temp. or the a/f or the boost/vac.
So something like
1. Voltmeter
2. Oil Pressure
3. Oil Temp
