Two good options here:
1. Just keep on screwing around with it until you get it. (That's what I did, and yes they definately are a pain to set up properly)
2. (Depending on the style of pedal)
Drill through any wholes the pedal may have on it.
Line up the pedal as you want it, mark and drill the holes on the stock metal pedal.
Push a flush mount bolt (with a flat screwdriver head) through both holes.
Put on a crush washer and tighten the bolt down with the proper bit and screwdriver.
