the only fabric that will work is tweed on the dash. vinyl and leather won't do any good on the dash because of the curves and its not too form fitting until you cut them into pieces and get someone sew it up, but then you have seems everywhere.
there is a bunch of pieces for tweed online.. just search on yahoo or google. type in like tweed fabric or goto your local auto upholstry shop. tweed is usually 12-15 bucks a yard.

I was thinking of doing the same thing. What about Vinyl Dye?

found some vinyl dye at a paint shop....gonna maybe test it out tonight....only 5 bucks a can....apparently it works great, as long as you prep the surface properly......remove all oils, armorall, etc.
you can find it too by googling Vinyl Dye ... it comes in an aerosol can.

Can that be done? How would you adhere the tweed to the door? spray can glue? or something professional? cuz that would be tight to do my doors in a black like where aftermath has his blue.

yea.. just goto your local upholstry store and get their spray glue ... its like a yellow contact cement.. its the best. Better than the 3m super 77 spray glue.
Heres a pic of robbie's interior back in the day w/black tweed
